I owned a Grampian 26 in the 90s. It is an easily boat to sail and surprisingly fast. It won't win any beauty contests, but with your modifications and the contrasting hull colours it could be a runner-up.
I'm buying another Grampian when I retire. If you live in Ontario you never HAVE to retire, but once I've paid for my sons university...well I'll just spend more time sailing.
